The MLL dept opened a new section of CSH 1213: Food Tour of China yesterday. The course was offered this past Fall 2025 semester, so make sure that if you are recommending the course, they do not already have credit for this topic. There
are no prerequisites for the course, and the student does not need to be TSI-completed.

Course Description
This immersive course is designed for students with or without a prior Chinese background. We’ll explore China’s rich culinary landscape—not just through simple cooking techniques, but through the history, geography, and philosophy behind
the food. All readings are from English language or translated materials.
Learning Outcomes
Upon completion of this course, students will be able to:
1. Demonstrate a deep understanding of Chinese food culture.
2. Analyze how and why Chinese food and culinary traditions have evolved in response to local, national, and global historical changes.
3. Engage in close readings and critical analysis of historical and interdisciplinary texts related to course topics.
4. Enhance their ability to articulate ideas clearly and effectively through presentations and active participation in class discussions.
5. Cook Chinese food.
