BESO collecting food donations for UTSA

The Bilingual Education Student Organization (BESO)will be collecting food donations for
UTSA’s Roadrunner Pantry, whose aim is to address food insecurity among the students.
The food pantry is a vision of students, staff and faculty to help other Roadrunners in a
time of need. The Roadrunner Pantry will be free to all current UTSA students and it
welcomes all non-expired donations, especially:
Peanut butter, Full meals Can/Box, Pasta/Sauce, Mashed Potatoes, Boxed Cereal, Oatmeal,
Fruit snacks/Cups, Microwave popcorn, Canned vegetables, Canned fruit, Canned beans,
Canned tuna, Instant rice, Crackers, Granola/Snack bars, Pudding cups, Soup, Toiletries
If you would like to contribute, please drop off donations in BESO Box located in the BBL

Brenda Medina spends most of her time in the classroom translating lessons for her Corpus
Christi ISD fourth-graders into English and Spanish because half her 20 students speak
English and the other half need extra bilingual support. A nine-year veteran, Medina is
part of an overworked force of bilingual certified educators in the state — as more
bilingual students file into Texas public school classrooms. Kellye Loving, her principal
at Oak Park Elementary, has worked hard to recruit teachers qualified to educate about 85
English-language learners at the school, including traveling to the Rio Grande Valley to
interview candidates and persuade them to move to the Corpus Christi area.
